Here's some historical [yet anecdotal] information about eating the same foods every day. It illustrates that throughout history [I've heard many sources same a similar thing] that humans sustained themselves on pretty much the same meals day after day. A lot of people have talked about food boredom and that people won't eat, though I'm fairly sure they've never been hungry. From a dietary point of view, this may lead to deficiency of course, which is why I lean on making my stores fairy 'complete' in the essential vitamins, fat and protein. I do have a variety of food kits though they center around a staple food, such as rolled oats, rice or pasta.

This is an interesting topic for me in that I'm very aware in Australia we are on one of the oldest continents, meaning our soils have been leached of all sorts of things over the years other countries never seem to worry about. I advocate eating a varied diet and supplementing it with minerals and vitamins in supplements, but taken regularly say once or twice a week. The problem is only getting worse and if we ever have to be producing our own food we will need to step up to the challenge of ensuring we get the required minerals and vitamins. Sorry there are too many problems to list, and there are no real good books on the subject that I know of.
