It's amazing what you can find in the laundry rooms as well. More laundry detergent and bleach than you could use in a lifetime. All the things they find in guest rooms that are left behind and unclaimed usually end up there as well. Can be some amazingly useful things.
Ice machines = fresh water. Vending and soda machines on each floor.
Also, if you ask the housekeepers, they are usually happy to hand you a bunch of the mini supplies and toiletries. Every day I ask for extra shampoo, conditioner, body wash...blaming my wife and her long hair, despite the fact that my wife rarely travels with me on business and has short hair.
If the SHTF and all hell breaks loose, find one of the master keys for the room safes. Usually held by security and management. It is amazing what people put in their in-room safes (even more amazing what they leave behind...passports, money, jewelry, gold, guns, etc.).
In addition to running a restaurant, my family owned a hotel for 15+ years.

Just got back from a couple of days away for work. First hotel was a budget chain, with very basic layout, no attached restaurant etc. Only thing I got for my preps was a teabag and pack of matches. Second place was 4-star, so got toothbrush sets, shampoo, soap etc toiletries, tea and coffee, sewing kit, matches and a few other bits. I have a fold-up toiletry bag that is kept ready for easy access in an emergency, with a full set of toothbrushes, toothpaste, soap, shampoo, razor, flannel, good sharp nail scissors and a few other bits; almost all of which has come from the hotels we've visited. Likewise, I have a brew kit in each of my backpacks, again with stuff from hotels and takeaway places - teabags, coffee, creamer, sugar, wet wipe, napkins, soap etc.
As to hotels in a SHTF situation - the kitchens would be good sources of canned and other food (in those huge multi-kilo containers), as well as stuff like solid fuel used in the bain marie. Probably a good source of tools (kitchen, garden, maintenance) and other stuff that would come in handy too.
