Well this is new to me. Another way to preserve, one that has apparently has been used for aeons. Simple how to; More detailed; How to get good bacteria growing; This really blows my mind, pretty much everything I've been told about food handling is ignored and yet apparently it's been done for a very long time and ends up with good results. I really do want some food handling info about it as well as risk assesments and so on, though I suppose if it's got alcohol in it [fermentation] as well as lactic acid and saline solution, this would help certain bacteria and not others, hopefully the ones that are good for us. This yoghurt which is fermented milk, full of bacteria that is good for us. I'm going to do some further investigation and exploring and eventually have a go as it looks super easy and I can use up some of those jars I've been saving. The pros, a wonderful no-energy way of preserving, which as a prepper highly appeals. The cons, the concerns with food poisoning! I'd be interested if anyone's had experience here, if anyone has it'll be Gaz probably

Ive made red cabbage sauerkraut! It was really easy, just basically salt massaged through the cabbage and then left to ferment! I did one batch and it turned out really nice the next batch went off quickly. You can actually tell if it is off as the odor is terrible.

Yeah, I'm digging it, adds other ways of preserving and have yet to do it yet but seems easy enough.

us asians have always been doing it... its probably coz of our climate.
fermented tofu with salt and chilli are fantastic with porridge!

Fermented foods have been done in pretty much every culture on the planet. It's mostly that upon the availability of refrigeration and hygiene concerns that most Western cultures had moved on.

Mate, I was so impressed I ordered the books on line from Amazon US. It was cheaper than from Booktopia in Aust!
And then I got really excited and found that OzFarmers in Australia where we get our Canning supplies has Fermenting supplies as well!!
So I placed an order with them!

Ive made red cabbage sauerkraut! It was really easy, just basically salt massaged through the cabbage and then left to ferment! I did one batch and it turned out really nice the next batch went off quickly. You can actually tell if it is off as the odor is terrible. Yummy, I LOVE Sauerkraut, with a big helping of mash and about 4 giant Bratwurst!!!!! Got the recipe??? I'm growing red cabbage this winter too - I usually just shred it, add finely chopped onion and a sprinkle of vinegar when I eat it. I'd love to have a go at your recipe!!

my girlfriend has been hassling me to make sauerkraut for a while now, fermented foods are meant to be great for your digestive system too. I guess those massive bags of salt I have are going to come in even more handy than I thought.
