Cat B. So same storage requirements, though I would imagine you could just take off the barrel from the carriage. Looks like lots of fun, I wonder if my local pistol range would be ok with it, it's just a big muzzle loader

That would be good fun i'm sure. Always wanted to have a go at canons just for the experience and also getting a lung full of powder smoke

I think they are just a cat A. The owner leaves most of it in the shed at the range but he takes the barrel home as that's the only part that's a "gun". The barrel is just some steam pipe, maybe 2" diameter or so (1" bore), what you see in the pic is some PVC pipe that makes it look more realistic.
Another bloke is going to make one as well, pretty simple I gather but you can't drill the touch hole yourself, that has to be done by the guy that certifies the barrel.

Cat B in Vic, I'd guess the same elsewhere. So keeping the barrel in your 'safe' or secure container according to your local laws would be the go. Oh what a gem of info there mate. I was convinced until you wrote that, I'd have to get a properly lathed down piece and pay some good coin. Obviously I need to do a significant amount of research but steam pipe of the correct dimensions is easy. Obviously getting the proper person to drill the touch hole and stamp serial numbers. If you see said owner, any further info would be great.
