Nothing screams 'real man' more than biltong, a fine cuban cigar, and straight single malt whisky. "Real man" doesn't need to be screamed. But one day, my friend, I hope we can meet and share the three luxuries you've noted here. Set up 12 star pickets in a rectangular pattern about 1m wide x 4m long. Set up fine mesh (smaller than chicken wire) on it as a table/mesh floor about 1m above the ground. Light a smoky fire under. Spread thinly sliced, marinaded meat over it to dry/smoke. Stand 2 heavily-armed watchmen (with Hannibal Lecter-style masks) over it to ensure no embezzling during the curing*.
*Actually, less than 50% makes it home, as it does get eaten a lot during the process.

Got some silverside from a new butcher last week, it sliced up quite nicely and have just finished the drying process. 5 days drying time, located SEQ. My light globe blew in the biltong maker so just ran it without - so just a small fan extracting air. After a few days it developed some white mold spots which is quite common in certain environments. I dabbed them away with a cloth soaked in some of the brown vinegar and all good
