I have never thought to make jerky in the dehydrator. I am going to have to try it out. Ive only got a cheap 70degree unit from ebay. But has been a trooper with my minces ive been storing away.
70 degree's is to low for making jerky,if I figure right.the one I have,gets up to 170 degree's.in which I'll have jerky inside of 6 hours. Fahrenheit or Celsius ?? I do Biltong out in the open dry air of 25-35 degrees C.

I was taught to aim for the jerky drying process to take roughly 36 hours, so adjust the heat accordingly. And I wasn't gonna argue with the guy who taught me either, since he grew up on an Indian reservation and his first name was literally "Wolf".
He also said that was quicker than normal too, cuz Brisbane had high humidity and thus the slower method wasn't suited.

170F that's approximately 64 or 65 Celsius
