Can't watch the Youtube videos here. They are getting filtered by the firewall.
I would assume with a knife? LOL...
The steps that I learned in slaughtering an animal in my uncle's farm years ago: 1) drain the animal of any blood (put in a separate container because pig, cow, and chicken blood can actually be used. Deer and Goat may be too) 2) slicing the abdomen to remove all the innards through there. Just make sure you don't cut too deep to slice into the organs. 3) Take everything out as one package. Dissect the organs as you see fit 4) Typically, you cut along the muscle lines and major joints depending on the plan that you have in transporting.

Now that just made me eager to hunt, I didn't realise it was so easy (harder then he made it look but I thought there would be a lot more cutting) to have such nice cuts of meat

You just have to make sure that stuff like bile, crap, and others don't taint the meat.

Best way I learnt was starting with rabbits, then roos, goats, deer etc.
Make sure you have a very sharp knife, and check it often that the knife isn't going blunt. Have a good sharpening steel, or even a sharpening stone, at hand. they come in useful.
Make sure you let us know how you get on!!!
As OL said, be careful not to taint the meat with bile, guts etc. If you do ( it will happen often ), have water to quickly rinse it off.
