This is my slightly edited version of the Impossible Pie recipe on AllRecipes, and apart from the butter* it can be made with pantry stores. 2 cups (500ml) coconut milk (the cans I buy are 400mL and I don't like leftovers so I just make the rest up with regular milk - or could do milk powder and water) 1 cup (90g) desiccated coconut (+ optional shredded coconut to garnish) 4 eggs 1 teaspoon vanilla essence 1 teaspoon coconut essence 1/2 cup plain flour 120g butter or margarine 3/4 cup caster or white sugar 1/4 teaspoon ground nutmeg - Place milk, desicated coconut, eggs, vanilla, flour, margarine and sugar in a bowl. Mix well.
- Pour into a greased and floured 25cm pie plate. Sprinkle nutmeg & shredded coconut (if using) on top.
- Bake at 180 degrees C for 45 minutes.

Yuuuuummo!!!! I love impossible pie! Never made it with coconut milk before! I have also seen a chocolate version!

The original recipe just used regular milk and I didn't think it tasted coconutty enough so substituted the coconut milk and added the coconut essence and shredded coconut. I wonder if you could make the chocolate version with just pantry stores as well?

I'll have to find the recipe but I'm pretty sure it was only that they added cocoa powder.... I'm admittedly a custard addict. Lol

Try using fresh young coconut, makes a world of difference from dessicated coconut Man if I could have a steady supply of green coconuts - I go crazy for them when I'm overseas.

Yes real butter but it is a lot saltier (guess it preserves it longer)! We were away over xmas for two weeks and it was very hot in the house, but we are still eating the butter from last year! It has about a years shelf life on it but would last a little longer.

I hate all those "spreads" and for a very long time we just replaced butter with Avacado, but I love the taste of butter oh so much.

We have about 30 coconut trees at the farm You would definitely go bananas... BUT if you wanted bananas, we have about the same number also then you can go coconuts over them
