OK first thing is first, this is my variation of a recipe that my girlfriend gave me, she found it at www.thehealthychef.com/2012/05/immune-boosting-chicken-soup/ As you can see, I do it different but the core ingredients are the same, I cannot recommend that website enough by the way, it has been a source of great flavor and fun in our kitchen for a long time now.

10 cloves garlic, smashed
(approx 1 whole bulb)
3-4 tablespoon finely grated ginger
2-3 tablespoon fresh grated turmeric (see notes)
0.5 litre (35 1/4 fl oz) chicken stock
0.5 litre (35 1/4 fl oz) vegetable stock
1.5 litre (35 1/4 fl oz) water
500 g (17 1/2 oz) free range / organic chicken breast, cut into chunks ( see notes on using whole chicken)
4 carrots diced
2 sticks of celery diced
1 large brown onion halved and then sliced
2 tablespoons of brown sugar
2 cups of angel hair pasta
1/4 - 1/2 teaspoon chili flakes (Optional, DO NOT ADD IF SERVING TO THE KIDS, GINGER HAS A SLIGHT BITE ON ITS OWN THAT THEY WILL ENJOY)
Fresh coriander roughly chopped (100% optional but I love coriander)
My Method: (Remember to stir slowly for about thirty seconds each time you add an ingredient)
Into a large soup pot put all of the stock and water, put over high heat, meanwhile start peeling your garlic.
Once the stock is boiling add the chicken and continue with the garlic. Once the garlic is all peeled simply crush it with the flat of a large knife and throw it in with the chicken, that simple, no need for fancy dicing or crushing devices. Now is a good time to turn the heat down to low and begin grating your fresh turmeric and ginger (Powdered is 100% fine but the flavor is so much better from fresh) and lastly for this stage, add the brown sugar.
Cut up your carrots and throw them in, cut up the celery and throw it in and do the same with your onion. Now pop the lid on that pot and let it simmer away for fifteen minutes. Once fifteen minutes has passed add your angel hair pasta and give it another three to five minutes, serve with fresh coriander and crusty bread rolls if you like.
