Spam spam marvellous spam!
Last night I made this spam curry for dinner, I was a little concerned that it wouldn't work out! But it was really good, very surprised!
Ingredients
1 Onion (or dehydrated)
Coconut oil or Ghee (or whatever you have)
1 can of SPAM
I packet of Curry sauce (I like Passage to India ones)
1/4 can beans
1/4 can carrots
1 95gm tin of coconut milk
Method
1) Fry an onion in oil
2) Chop up SPAM into small cubes (You dont want them too big as when frying they cook better when small) and then fry until golden brown!
3) Pour in curry sauce and heat well
4) Add coconut milk and heat till simmering
5) Add carrots and Beans
6) Wait for excess liquid to reduce
7) Serve with Rice
We are having leftovers for LUnch!
