This winter has seen a bumper crop in my [imaginary] turnip garden. How should I best preserve the excess?

My first thought is Sauerruben - fermented turnips.
Grate the turnips - or julienne them with a mandolin - and add about 10g of salt per 500g of turnip. Ferment them either in a "Fido" brand jar, a kraut crock, or any other jar which seals out the air (but be sure to "burp" it every day to release pressure).
In about a month you'll have horseradish-y goodness.

Turnips... turnips...
Seems to be a theme here but just what I would do not what you should do...
I'd give them to my wife? Who is asleep so I cannot answer what she would do with them.
I'm guessing pickle them, seems to be what she does with everything else!

Rather than having a massive yield of turnips hows about planting swedes, parsnip and carrots as well, then when harvested turn some of them into a veggie stock and bottle, you can then use it as a base for soup, stew at a later date. If these veg are planted at the same time they generally are ready to harvest at the same time. Another idea is to sell/barter some with neighbours or at the local market so you can then buy some staples that you might be low on.... let some go to seed so you will have a supply for next year. You can store some, but they are no where near as good as the fresh veg!

Of course, in hindsight..... well was just thinking if you wanted to barter it might be a more useful item.... most people these days look at turnips and wonder WTF would i do with this whereas if you have the magic four the peeps would be like ohhh soooup ok in fact I will be your first customer I will trade you a hypothetical sandwich bag of amaranth grain for a soup bunch.... thanks <3

You could just leave them in the ground and have fresh somewhat hidden storage effectively forever.
