Good stuff mate. Thanks for posting.
I've got a huge resource of carp just on my doorstep but have never even thought of eating one.
Most people around here just feed them to the pelicans, I've never actually seen anyone do anything but just bleed them and drop them on the jetty.
Will have to make an effort to go catch one and give it a go. If there ever came a need would be good to have the confidence to eat them.
Second bloke was a bit of a clown but good value I just about lost it at "ohhh he's got eggs"

I saw a while ago one of the government agencies were trying to highlight the potential value in feral species that are eaten elsewhere but Aussies turn their noses up at. Carp and feral pig were two of the big ones. The Chinese love their carp while the europeans are importing our wild shot feral pig. It's just a lack of knowledge about how to properly check the animals for disease and parasites when they are harvested and how to prepare them to make them palatable.

Yes, every so often I see a news item about x tonnes of carp being removed from the Murray Darling etc and made into fertiliser. I pass these on to my Chinese colleagues, who can't believe that anyone could be so wasteful with a perfectly good food source. Actually, the Danish government recently did a small tourism campaign about a certain type of feral shellfish that have invaded their costs but which the Chinese love. While it was done a a joke more than anything, Chinese visitor numbers have gone through the roof, with people specifically going their so they can harvest as many kilos of sheelfish as possible.

Carp are fine to eat, ive done it. Catch, bleed quickly, fillet, cut the red flesh away from the white flesh, wash, cook the white flesh.
The only issue is that they are full of bones, you can mince them to overcome this and benefit from the cartilage as well.
You can put them in a bath of fresh water for a couple of days if they are alive as well, this will clean them up, then eat them.

This is the two reasons I try to avoid fish in China -- People don't fillet them, instead cooking whole, so you end up with a mouth full of bones. Meanwhile, you see people fishing for carp in the dirty stinking canals, then immediately going and selling them. There's no way I would want to eat anything that comes from such a muck infested waterway (although people say the reason the water is so cloudy is due to carp mixing up the riverbed. I think the stench and the scum floating on the water proves otherwise though).
