Anyone have a good source for dehydrated potato and sweet potato - preferably without extras mixed in (like Deb) but just with the straight veg? I'm pretty sure I saw them listed in a store that supplies the food industry, but I would like to find some that "anyone" could buy (preferably in bulk).
I read a while ago something about home dehydrated potato being a risk for botulism, although I can't find the place I read it again. I also read that a commercial supplier of it didn't vacuum pack it for that very reason. When I google looking for info I can't seem to get consistent answers on how to be sure it's safe. I'm not sure how you'd manage to dehydrated potato enough to blend it to a powder while still having enough moisture for botulism but still, along with the fact that I have plenty else to dehydrate, purchasing these commercially prepared would be my preference.
It would be very convenient if it were possible to get dehydrated, powdered or flaked potato and sweet potato (would love other veg too).

I've only seen the Deb mashed potato. It tastes like the chemicals it contains...

In my current hunt for bulk food suppliers I came across Campbells that I have not been to yet (about 2 hours drive for me) but I read on another forum that they do cash and carry. They're a supplier to restaurants & caterers so have things in larger quantities.
Example:
They also do things like castor sugar in 15kg bags & cooking salt in 10kg bags... so I'm planning a trip once I get a day.
Peter To me Deb tastes like camping... the missus hates it though so it's not something I stock much of. I'm hoping this German made maggi product tastes better but will still be better than not having anything.
My old bulk foods supplier used to have dehydrated potato flakes... I'm pretty sure it isn't that uncommon.

I use to shop at Campbells (many many yr ago I had a catering business) and have been wondering whether it is worth a trip. It's about 2 hrs from me now too.

I have a Campbells membership - you have to have an ABN to get a membership (not open to the general public). Sale prices at Woolworths and Coles tend to beat Campbells pricing. You'll find that some of their stock has been sitting on their shelves for a long time. Deb's potatoes are pretty rough, but don't let that sour you on all instant mashed potatoes. I buy Edgell Idahoan (118 servings) from my local Greek importer and they are fantastic. I've done taste testing at work and everyone has been impressed, including a former chef and a leading restaurant reviewer.
