I have been storing some UHT milk and cream for the last couple of years. In a cool / dark / dry basement area.
We rotate the milk regularly as far enough from town we occasionally don't have fresh. However we had one carton exp. 10/14 which I discovered has missed rotation. It was a 1L of light blue (so reduced, but not low fat) anchor UHT milk - so three years over. Tasted absolutely fine - could not tell difference to fresh UHT.
We don't rotate the cream as often and just have a dozen small UHT containers as treat / comfort food. Only has a 9 months shelf life, so presumably due to high fat content. 8/15 - odd taste but tasted ok and whipped ok. Wife said had a slight vinegar taste (which I couldn't taste) so probably starting to turn 6/16 - tasted fine and whipped ok 3/17 - tasted fine and whipped ok.
So with cream I will routinely store 12 months beyond best by date and for milk 24 months. I will do a couple more tests - Im pretty happy with milk, but fat in cream worries me !!!

I've had UHT milk up to around 15 months past expiry date that all tasted fine (which makes you wonder just how much chemicals are in it?) We used to keep a couple of packs of UHT cream in the freezer, but stopped doing that because it doesn't whip so well after freezing -- presumably because the frozen crystals separates the liquids and solid fat too much. Still have a couple packs that must be slightly past use by date in one of the cupboards that I better rotate before my wife finds and chucks them.
