Im looking a 2-3 reasonable cheap --> moderately priced winding analogue watches to store away.
Anyone have any experience / ideas around good quality?

What do you consider moderately priced?
I've been wearing a solar powered Seiko for about 4 or 5 years now and can attest to it's excellent durability. It may not meet your requirement though as I assume it's internal battery will eventually fail. Although ... I also own a solar powered calculator purchased in 1986 and that still works perfectly.
I wasn't aware there even are modern wind-ups.

How about an automatic self-winding watch? In that case nothing would be better in terms of price for a mechanical watch than a Seiko SKX007 which I've been wearing for the past several years, it's an entry level diving watch at $150-$200, water resistent for up to 200 meters (so you know the seals in regards to heavy rain and swimming would easily last for a lot longer if post-shtf servicing is impossible), mono-directional bezel which you can use as a timer etc etc. I have been using mine as a daily beater without bothering to service it and it hasn't failed me yet (never take it off), only flaw I'd say is that you can't handwind it. But that's also an advantage as it means you don't constantly have to open up the crown and wear out the thread. It's a simple design but built tough, and for that budget nothing is better (in terms of a mechanical watch, since I heard that digital ones like G-Shock are as tough as a Nokia). wornandwound.com/review/seiko-skx007-review/

I've had self-winding watches in the past, but they always lost at least a couple of minutes each day. Maybe I bought the cheap & nasty ones...
Also, waterproof depth of watches is very misleading; to SCUBA dive to 40m you need a watch rated to 200m. A 100m watch is only good for a few metres of depth, while a 50m watch may struggle in the bathtub.

I wasn't aware there even are modern wind-ups. My watch is a citizen solar powered one, and I think it is about 11 yrs old. It’s stayed accurate.

I was looking on eBay last night at wind up watches. There are some super cheap ones and some super expensive, but I didn’t see much in between.
It could be worth getting a cheapie to see, firstly, if it keeps time and is ok at the start. Then if it passed that test getting a couple to put away (incase they are not available soon) but using one for a few months to see if it kept working for at least that period of time.
I’ll probably just keep an eye open for wind ups at op shops. I like the idea of having a couple of watches put away.

I've got 1 of the Seiko automatic dive watches for the last 15yrs. Although I only ever wore it as a fancy dress watch since I stop scuba diving 13 years ago. The only drama I had with it was the band snapped in the middle during a game of roulette at the casino lol so now it just lives in a box or drawer somewhere as I haven't bothered to get a new band for it

I know they make a lot of automatics and some of which with handwind features as well like Tudor watches, but I don't know of any modern exclusively wind-up. In terms of accuracy usually the quartz is better then any mechanical watch. Why do you want a wind-up so much?

Why do you want a wind-up so much? +1 I have a Seiko 5 automatic, about $150 a few years ago, works a treat but does gain time a bit.

I haven't owned a watch since I was a child. Never needed one. Agreed. I've owned many watches, but haven't needed to use them since my late teens. One exception: SCUBA diving. It's very useful then. These days there are clocks everywhere - not just on walls or appliances (remember VCR's anyone?), but phones, computers, etc. When I'm not at work (or needing to see the time to get out of bed in the morning) the last thing I need is something telling me now many seconds of my life have passed since the last time I looked.

We don't have a single clock in our house, and I seldom carry a phone, BUT I do at times need to know the time, for example so I get up in time for work, and, more importantly, know when to knock off

So it doesn’t sound as though anyone has experience with currently available wind up watches. I received an expensive Swiss wind-up watch for a birthday a couple of years ago. Worked fine for a year or so, then started losing time and had to rewind more and more often. Finally gave up the ghost a few weeks ago, but luckily is still under warranty. Will be interesting to see what the prob is, as something that cost that amount of money should have last a lot longer.
