Here’s a recipe I wanted to test out that puts to use the buckets of powdered milk I have stored. Remember, if you are constantly rotating your stored food (especially the 3-month food supply) not only will you greatly reduce the chance of anything going bad, but you’ll actually be learning to use your bulk-stored food and eating what you store — some of the most important rules in food storage. Saw this the other day. Don't drink milk but got some powdered milk with the shopping today to give it a try. A world without cheese would not be a good place for me to be.

I use to regularly make this from non powdered milk. It makes a nice cream cheese.
A soft cheese made with yoghurt is also really good, and I use to make yoghurt with just powdered milk. This would be easy to make in times when there’s no stores as long as you have a bottle of probiotic tablets or a couple of pkts of yogurt powder stashed. Just make the yoghurt and drain it in cheese cloth at least overnight. As well as being delicious on bread, crackers, etc I used yoghurt cheese to stuff zucchini flowers or to mix in with veg in the frypan. It goes more cheesey flavoured when cooked.
(These days I tend to make a cashew cheese instead which is really good.)
