I have heard of pickled watermelon rinds but I think it may be an American thing. Also heard of pickled pigs trotters....?

I've tried some that a friend harvested from up in the hills: good flavour but not much flesh around the seeds. Probably in good seasons when the fruit are big its worth doing.

Sweetie routinely pickles eggs as we have a surplus. She uses a white vinegar brine and not much else to make them generic for most any other use. If you want one spicy, splash with hot sauce.
Only problem is I like them right out of the jar..... They do tend to cause consequences.... Pull my finger...

I harvest and eat sea plants. Depending on the species delicious raw or dried. Dunno if I'd go for pickled.
I do enjoy home-made pickled cauliflower. And pickled carrot.
