Raw pack and canning also tenderises meat wonderfully, and even the shittiest tough old meat seems to come out fine. Some of our canned meats are coming uo to five years in the jar and narry a problem.

She told us how to pack the jars, and that it's easy. She didn't tell us about the bit where you actually put it in the canning bath, how long, What it looks like afterwards, et.c. ... ?

Pressure canner, not water bath mate. They come out looking cooked pretty much.... As for times, it depends on jar size mainly.
