My US Red Neck cousins near Atlanta Georgia do a lot of smoke house projects. They are begging me all the time to trade for things made with bear meat.
No way will that happen as both Canada and US customs would have a fit if we tried shipping home made things like that. The don't like it, but tolerate shipping things like commercial canned maple syrup, bacon marmalade, maple cookies and other Canadian soul foods. When there mum, my aunt was in assisted living and nursing home we used to send her Canadian Red Rose tea care packages. She would not share with family or the other residents. That was her treat.
Met a guy this winter from the next town over the pass who has a small locker plant, meat market. He is the first to be able to explain to me the differences between #1 and #2 sausage cures. Will have to see what we can negotiate for a whole hog made into fresh sausage. He is from Switzerland and when I mentioned whole hog sausage he picked up on that idea real quick. Once we can get the meat, then start running experiments through the smoker...
