Here is a step by step guide, with pictures, on how to butcher your own birds. I remember watching dad do this when I was very little, he let me watch the entire process.

Quite good walk throughs there although I prefer to snap their necks instead of chopping the heads off as when i was a kid my neighbors behind us used to do this and let the chickens run around headless till they dropped ....... needless to say it was quite confusing for a little girl!!
