Anyone have preference on preserving chicken eggs?
We have been giving away eggs by the dozens but I would like to start keeping some for storage, I have no practical experience on preservation of eggs but I have been researching some methods and sharing in case it's of interest to anyone or you have suggestions for improvement. Favourite recipes? Failed techniques? Safest techniques? Would these work for duck or quail eggs?
We don't refridgerate our eggs nor do we wash them. Just keep them on the kitchen bench away from sunlight. Any eggs that are dirty or cracked I just keep aside and scramble for the dogs. We could feed the scambled eggs back to the chooks but the dogs love them and we don't get enough broken or dirty ones to really be an issue
30+ ways to preserve eggs - Historical and modern methods. Lots of methods listed including making pasta, salt cured eggs/yolks, thousand year eggs, lemon curd, freezing, freeze drying, the list goes on.
The Top 6 Historical Egg Preservation Techniques!
Waterglass:
This is a technique that my grandparents used, they kept a barrel down the back yard. I always though waterglass would be some old fashioned, difficult to find chemical.
"Water glassing is a long-standing historical method that is very easy and very effective! While there are several different water glassing mediums (the technical modern one being sodium silicate), here Carolyn shows you how to use the cheap and readily available hydrated lime (also known as pickling lime and slacked lime) to easily store your eggs for up to 2 years without refrigeration!"

Dehydrating:
Lots of stuff on dehydrating raw eggs, some on cooked (scrambled). I would prefer cooked.
