We can eat baked beans and plain white rice if we need to but the wife won't be happy about it.
I have a few pantry friendly meals I make which are better with fresh/frozen meat and veges if you can get them but are still pretty good without.
Fried rice, serves 2.
-Fry any onion, bacon, chicken, spam or egg you might have.
-1 cup of rice, boiled then added to the fry pan
-Add 1 can of mixed veges such as the pea/corn/carrot type mixes, but anything will do. Fresh, frozen, whatever you got.
-Add plenty of soy sauce and chilli flakes to your taste.
Pair with a beer of your choice
Pesto penne, serves 2
-Fry some onion and chicken if you've got it.
-Boil 250g penne.
Like above, add the pasta top the fry pan.
-Add a jar of pesto, a can of peas or asparagus and stir through until it's all heated and well mixed.
-Top with some parmesan in your bowl.
Burrito bowl, servings depend on how many extras you add
-Cook onion and mince beef if you got it (You sensing a theme here? I'm not very creative)
-Otherwise in a pan, warm up a can of 4 bean mix, black beans, or basically any other beans
-Mix in a can of diced tomatoes
-Add a taco seasoning packet or your own similar spice mix
-Drain a can of corn kernels
-If you have any of the following: Chop into small pieces some lettuce, tomato, cucumber, red onion, avocado and/or grate some carrot.
Serve in bowls with each ingredient in its own section, top with grated cheese and mix it all together if you want. Or serve on flat breads, tortillas if you've got them.
Spagbol, serves 2
-You guessed it, fry some onion, garlic, mince meat, bacon, pork sausages, grated carrot, can use a can chickpeas.. whatever's handy.
-Boil 250g spaghetti
-In the meat pan, or in an empty one if you've got nothing fresh, heat a jar of pasta sauce and a tin of crushed tomatoes. I cheat and get the pasta sauce with herbs in it, and use the canned tomato to bulk it up, but you can just use canned tomatoes and your own spices if you like.
Add some broccoli if you've got it.
Drain the spaghetti and put it back I the pot.
Take some of the sauce and add it to the pot, mixing well.
Serve pasta in a bowl, add sauce on top, with cheese if you got some, and a hunk of warm bread with butter and garlic never hurt anyone...
Pair with a glass of red
Easy oats, serves 1
-Half a cup of rolled oats in a bowl with half a cup of milk or water.
-In the microwave for 90seconds, otherwise cook in a pot following directions on the packet.
-Add 10g of honey, some canned fruit (the golden circle plastic jars are handy), dried fruit, condensed milk, frozen berries or whatever else sweet and yummy you got laying round.
Pair with coffee
Gourmet Weet-Bix, serves 1
2 weetbix, a cup of milk... pretty simple yeh
-Add 50g of one of the fruity muesli mixes, I like this berry one they got at coles, some sunflower or pumpkin seeds and/or frozen berries
Instant noodles, serves 1
-Migoreng in a bowl, cover with boiling water
-Add some chopped carrot or beans, or bean shoots to the bowl.
-Add some cashews, I like to roughly chop these also
-Partially drain when cooked, a little water left helps mix the spices and makes it a bit soupy
-Mix through flavour packets
-Add a can of tuna
Pair with a can of Coke
That's all I can be bothered typing out on my phone tonight, but what do you have on the menu than can be done out of the pantry and is pretty good for normal living expectations with a little help from fresh or frozen stuff?
