A mostly traditional method! However you can take virtually all the useable / viable meat off a roo without gutting them.

Back straps and hind quarters come off and the rest goes to the wedgies and Goannas , love a roo curry ....

To only be used on road kill of course, because everywhere except Tassie it's illegal to kill a roo unless you have a tag.
