Years ago I lived way too close for my own good to a Jack Links brand jerky factory....
There was a little outlet grocery that carried 2 kilo bags of little crumb bits, likely machine cheanings and floor sweepings... It didn't matter as it was all good... If, or however bad that was for me, I still miss it at times..
At this moment there is a meter of snow all around and on the roof of the smoke house... A site to bring a tear to the eye as the savory things it is able to provide..
You tell me how bad wild bull is.. And how good camel and roo are... So.... I'm looking forward to recipes for rubs, brines, processes and such from this thread...

Kangaroo Jerky - fresh, thinly sliced roo. Marinade overnight in Plum Sauce. Put in smoker for about 35-45 min on 175c ( time depends on how moist you want it ). Peach wood chips are good, as well as plum and apricot.
Send the kids to the shop furthest from the house for an ice cream, this should give you time to remove, cool, and pack - I end up with less than half if kids are around!

Ok. I've never had kangaroo jerky! I've made ground beef jerky in my dehydrator. Kids loved it, I thought it was alright

Ive had kangaroo like that sa hunter except plain no marinade, very rich tasting meat i found.

Heres one ive recipe i have been making for years.
Brown vinegar, brown sugar, splash of worcestershire sauce, splash of soy sauce and marinade overnight. Pull it out next day, drain well and then dust each strip with a mix of toasted ground coriander seed, ground black pepper, sea salt and hot paprika.
Mostly traditional but also a little bit modern and tastes bloody good!

I just made a small batch yesterday using round steak and 60 degrees in the fan forced oven for about 7 hrs. Slightly under done but meh! it's all gone so i mist have been ok.

I've got a jerky maker thingy sitting in the box for the last 4 or 5 yrs now still waiting for me to get around to using it lol The thing that's been keeping me back is trying to find someone up my way that sells "liquid smoke" for that bit of extra flavour
