The other day when we got the half beef from our neighbors, we got the heart, liver, kidneys and some suit from the animal.. This as who got the other half did not want any of those items..
So.... Sweetie looked up a recipe for heart.. It saying make a box of Stove Top stuffing, stuff the heart, wrap with bacon, bake low and slow... Cool and chill, then slice thin for sandwich meat... My dad did this years ago, and other than needing a bit of spice it turned out very good..
Mother in law likes liver better than we do.. She will get the bulk of that.. The kidneys will get boiled, ground and pressure canned in pint jars to use in chicken feed this winter.. Once we got a whole bunch of organ meats like this from our friends with the butcher shop.. These meats were not good for eating, but we canned them for chicken feed like mentioned... Worked out well to supplement the flocks winter feed...
Anyone with some good recipes, uses for this kind of meat ??

I've heard that heart can be a really difficult meat with because it's so tough. I've had pho with it in there before though, along with blood jelly. So the heart was slow cooked for a long time. I think about 8 hours in a slow cooker? Then they sliced it super thin, and just bunged it into the pho at the end when they put it all together. It was really nice. A little gamey, but good. But they also didn't put too much of it in so as not to take over from the other ingredients.
I would suspect you could use it in a lot of recipes where you might use ox tongue. Sweetie's attempt at stove top stuffing sounds similar to pressed tongue. My grandmother and mum used to make that pretty frequently and it was AWESOME in a good cold sandwich with salads on a hot day.
