Recipe#1 - Broccoli, Celery & Pea Soup
Ingredients: 1 x onion, diced 500g of Broccoli, stalks chopped small, florets medium sized 300g Celery, chopped 200g of frozen peas 1L Vegetable stock 3 Bay leaves Parsley, finely chopped 1 tbs of Balsamic vinegar Olive oil Salt & Pepper
Method: Heat stock in a seperate pot and add frozen peas (I use Maggie Beer's stock and add 1/2 tbl salt) Heat oil in a large pot and add onion and broccoli stalks, cook until onions soft Add broccoli florets & celery pieces and stir for a minute to cover in oil and lightly cook, add olive oil if required Add hot stock with thawed peas Add Bay leaves and stir into mixture Cover and bring to medium simmer for 12~15 minutes until veg is cooked but not disintegrating Remove Bay Leaves and lightly blend and try to keep a nice texture - not too smooth Add Balsamic vinegar and stir into mixture Add Salt, Pepper & Parsley to taste
Notes: Cream can be added if needed.

Recipe#2 - Pumpkin SoupIngredients:Olive oil 1 Medium onion, diced 1 large potato, diced 1 kg Jap pumpkin, diced (see notes) 4 cups of vegetable stock 1 teaspoon on ground nutmeg Salt & pepper Method:Heat oil in a pot and fry onions on a low temperature until soft. Add pumpkin, potato and nutmeg, stirring constantly for 2~3 minutes. Do not allow the nutmeg to burn on the base of the pot Add stock and bring to the boil, reduce heat and cook until pumpkin & potato is tender (see notes) Puree in a blender until smooth Season to taste
Notes: Use a good quality sweet pumpkin like Jap or Kent. Cut the pumpkin into larger pieces than the potatoes to compensate for the faster cooking time of the pumpkin. 1cm square for the potatoes to say 4-5cm for the pumpkin. Can be served with spring onions, sour cream or Feta cheese. ***And Bacon***

I made and freeze dried a batch of pumpkin and bacon soup, you're on the money there!
This post has motivated me, I think I'll make a batch of cream of broccoli soup for MREs too. Soups are great for MREs for cold weather. Sure you have to heat the water (unless you make gazpacho, and I HATE gazpacho! lol) but it's warming and comforting and definitely a good thing to have on hand.

Recipe#3 - Tomato Soup with Pasta & Basil
Ingredients: 3 Large ripe tomatoes (750g) Olive oil 1 medium Onion, finely chopped 1 clove of garlic, crushed 1 red capsicum, finely chopped 4 cups (1 litre) vegetable stock 4 tablespoons of tomato paste Salt & pepper 1 teaspoon sugar ¼ cup (7g) of basil leaves or 1½ teaspoons dried basil 1 cup (155g) small shell pasta or macaroni Fresh basil to serve
Method: Cut a cross on the bottom of each tomato & place in a pot of boiling water for about 1 minute. Drain & cool. Peel skins from tomatoes & discard. Roughly chop flesh. Heat oil in a pot, add onion, garlic & red pepper; cook, stirring for 10 minutes or until all ingredients are soft. Add tomatoes & cook another 10 minutes. Add the stock, tomato paste, salt, pepper & sugar. Cover & simmer for 15 minutes. Remove from the heat, add the basil & allow to cool. Process in a food processor or blender until smooth. Return the mixture to the pot & reheat gently. Cook the pasta separately in boiling, salted water until tender then add to soup. Serve with fresh basil leaves
Notes: Keep the pasta separate if refrigerating and serving at a later date. Pasta will disintegrate if left in the soup for extended periods.

Here's a recipe for EASY MINESTRONE SOUP.
Any vegetables you like, e.g., onion, celery, carrot, parsnip, pumpkin, potato, cauliflower, cabbage, peas corn, capsicum, herbs .... chopped. Chicken or vegetable stock. Tin of crushed tomatoes. Small macaroni. Tin of baked beans. Grated tasty cheese or parmesan.
Saute the chopped vegetables lightly in oil. Add the stock, tin of tomatoes and simmer gently until nearly cooked. Add the small macaroni and continue simmering. Stir when needed. When cooked, add the baked beans, stir and heat through. Serve with grated cheese and crusty bread. Garnish with fresh herbs.
This is the kind of recipe that is easy to adjust to your own tastes and what ingredients you have available. It freezes well.

Recipe#4 - Corn Chowder
Ingredients: 90g of butter 2 large onions, finely chopped 1 clove of garlic, crushed 2 teaspoons cumin seeds 4 cups (1 Litre) vegetable stock 2 medium potatoes, peeled and diced 1 cup (250g) canned creamed corn 2 cups (400g) fresh corn kernels (about 3 cobbs) 3 tablespoons chopped fresh parsley 1 cup (125g) grated cheddar cheese Salt & freshly ground black pepper 3 tablespoons cream (optional) 2 tablespoons chopped fresh chives, to garnish
Method: Heat butter in pot, add the onions & cook over medium-high heat for 5 minutes or until golden. Add garlic & cumin seeds, cook for 1 minute, stirring constantly. Add vegetable stock, bring to the boil, & add potatoes, reduce heat. Simmer, uncovered, for 10 minutes Add the creamed corn, corn kernels and parsley. Bring to the boil, reduce heat, simmer for 10 minutes. Stir through the cheese, salt & pepper, to taste, & cream. Heat gently until the cheese melts. Serve immediately, sprinkled with chopped chives

Recipe#5 - Roasted Pumpkin SoupIngredients:750g of Pumpkin, cut into wedges, skin on 1 onion, sliced 2 garlic cloves Olive oil 1 potato, sliced 400g tinned plum tomatoes 300ml stock
Method:Pre-heat oven to 200C Add Pumpkin, onion, garlic & potato into baking tray, season well and toss in olive oil Add tomatoes to tray and bake in oven for 45 – 60 minutes Once tender, peel skin from pumpkin and blend with the stock Add to a pot and re-heat if necessary
Notes: May need seasoning at re-heat (depends on the type & quality of tinned tomatoes ie - use Italian!) Serve with a good bread, grilled with butter & sage... or bacon.

Recipe#6 - 'Hard' Minestrone
Ingredients:
1¼ cups (250g – or 1 tin after draining) of butter or haricot beans (see notes for fresh) Olive oil 2 onions, chopped 2 cloves of garlic, crushed 4 tomatoes, peeled & chopped 3 tablespoons of chopped parsley 9 cups (2.25 litres) vegetable stock ¼ cup of red wine 1 carrot, chopped 1 turnip, chopped 2 potatoes, chopped 1 celery stick, chopped 4 tablespoons tomato paste 1 zucchini, sliced ½ cup (60g) sliced green beans ½ cup (80g) macaroni elbows or other pasta salt & pepper Shaved Parmesan cheese, for serving
Method:
Heat oil in pot, add onions & garlic. Cook, stirring until onion is soft. Add the tomatoes, parsley, stock & wine. Simmer, covered, over low heat for 1 hour & add the beans. Simmer for a further hour Add the carrot, turnip, potatoes, celery & tomato paste. Simmer, covered for 10 – 15 minutes Add the zucchini, green beans and pasta. Simmer for 10 – 15 minutes, or until the vegetables & pasta are tender. Season with salt & pepper. Serve topped with shavings or Parmesan cheese.
Notes:
If using fresh beans – soak overnight in water, drain. Add to a pot of boiling water and simmer for 15 minutes. Drain. Add to the pot at step 2 above and cook for the 2 full hours with the rest of the ingredients
Pasta will disintegrate if soup is refrigerated

One thing I used to make when my kids were school age.. We called it a number of different names.. Of course the grosser the name someone could think of the more laughs we had over it and the more they liked it...
Hamburger Soup Road Kill Soup Neighbors Lost Cat Soup = = = In a 8 or 12 quart pot.. Boil, rinse, drain a pound of well crumbled hamburger Boil most any shape pasta in small pieces until about half done Add frozen mixed veggies, a can of diced potatoes, fine diced onion, a bit of fine chopped celery A bit of black pepper A bit of beef soup base powder... NOT bullion as it is too salty By the time all is heated through the pasta will be fully done.. Adjust spices to family taste..
