Ran across this and thought it was kind of interesting.. I've had some of these things as a kid and young man.. Had alligator a couple different times and ways.. Was never impressed with it.. Rattle snake isn't bad roasted over an open fire.. Or maybe it was the beer made it so ??
Anything like this ..unique.. to your part of the world ??

To add.. One other ..unusual.. food being Rocky Mountain Oysters.. Best when cooked over a wood fire while branding livestock..

Woooooooow... Canned rattlesnake?! That sounds interesting 🤣. A lot of those founds seem odd, I'd try all of them. We used to very occasionally have lamb brains when I was a kid, my mum would cook them with a gravy. I didn't mind it, but it was mostly to iron-y for me. Creamed possum seems like a lot of work for the amount of meat that you'd actually get but in saying that we eat rabbit no worries so *shrug*. To be honest I'll try most foods. I struggle with insects. I'm ok with crickets, but that's because they're largely crunchy. There's something off-putting about the idea of biting into a crunchy external and getting a mooshy internal. Not a fan of that idea lol. But he did mention canned lamb tongue, I have VERY fond memories of the pressed ox tongue that my grandmother used to make. I even scored a tongue press a couple of years back from my in-laws because I mentioned I really like it.
I haven't gotten around to actually making it yet, I should put an order in with the butcher to get some.

He had friends from the Louisiana state Higgins boat works.. When I was a kid they all exchanged ..care packages.. at Christmas.. Things like dried hot peppers, southern coffee and such. Once in a while dad would make scrambled eggs with calf brains and hot peppers, Cajun coffee and such.. My mom would go over to her brothers house those Saturday mornings..
